Milk from cows with solely the A2 beta-casein protein allele is referred to as A2 Cow Milk or Desi Cow Milk. To break it down even further, two distinct beta-casein proteins are found in cow’s milk. A single amino acid distinguishes proteins A1 and A2. The vast majority of Asian and African dairy cattle generate A2 milk. Quality A2 milk is produced most reliably by Indian breeds such as Gir, Sahiwal, Kankrej, Rathi, and Hariana. However, A1 milk is produced by European cows.
